Serrano Wrapped Chicken

Ingredients:

  • 7-8 pieces of serrano ham
  • 3 large chicken breasts 
  • 8 oz cream cheese
  • 2 tbsp butter 
  • tbsp paprika or merken
  • red bell pepper, chopped
  • small red onion, minced
  • half a zucchini cut into small pieces 
  • Salt and pepper to taste


Instructions
1. Sautee the veggies and onions in the butter. 
2. In a seperate bowl work the paprika into the softened cream cheese. 
3. Butterfly the chicken and place it on the ham.
4. Spread the cream cheese mixture over the chicken and then spread some of the veggie mixture on top. Sprinkle with a litte salt and pepper.
5. Roll the ham over the chicken and secure with toothpicks. 
6. Place the rolled chickens on a buttered baking dish.


7. Bake in 325 F degree oven for 15-20 minutes.
