Leche Flan

Ingredients:
1 cup brown sugar
1 can of evaporated milk
1 can of condensed milk
10 egg yolks  (yes 10 and yes just the yolks, you canmake a scramle with the egg whites)
1 tbsp of vanilla
1 tsp of cinnamon

Instructions:
1. In a small skillet melt the sugar with 2 tablespoons of sugar. Wait until it bubbles a little before stirring it.

2. Pour the mixture into your pan (I used a silicon pan) and spread it out evenly. Set aside to cool.

3. In  a large bowl mix together the vanilla with the egg yolks.

4. Next incorporate the evaporated milk and condensed milk. Mix for about 2-3 minutes. Pour the mixture into the pan.

5. Cover the pan with aluminum foil. Place the pan into a water bath. Place the bath into a 400 degree preheated oven.

6. Steam/Bake for about 45 minutes. Take the flan out of the oven and let cool. Refrigerate after it cools.

Variations: I've seen recipes where they use 6 whole eggs instead. However I believe this is the traditional Filipino recipe.
